Protecting data sent through email from a form

Let's say that I have a form published on the internet. The form doesn't require any authentication etc to access it. The form sends the submitted data via email to an email address.

Besides using SSL, are there any other measures that are needed to protect the data being transmitted in the email? Thanks in advance!

Email is neither private or secure.  If the information sensitive or personal sending via email is not the best option.  Conventional snail mail still has its uses.

Thanks for the post. I'm looking for more info... Would SSL not help any? Are there any measures that would encrypt the email during transmission?
