vmware or hype-v

We are looking into purchasing a new server. I would like to use it for virtualization. To start with, just to setup a backup for the mail server, webserver and a DC. To start with we will use it as a backup for the email and webserver and for testing for the DC. HOwever, I don't know how to figure what I need in the server and if I should go with vmware or hype-v and why? Your advice and options would be most helpful. Thanks!

This is the server I have requested. It should run either of them. And give us room to grow.
HP Proliant DL380 G7 Server
6 core Intel Xeon Pricessor E5649
HP 8GB PC3-10600E 2x4GB 2rack memory
5-300 GB 6G sas 10k rpm SFF

All our in house servers run windows. Thanks for all the info. I'm sure I'll have lots of question once I get to playing with this. Maybe I'll doenload Hyper-v and VMware ESXi free edition and see which one I like the feel of. Thanks again.
Looks like ram will be my first upgrade..
If you use VMware ESXi, it has a much smaller footprint, and hence securer than Hyper-V, install it on the SD card or USB flash drive, and use ALL the datastore to store VMs. (you cannot do this with Hyper-V!)
