Good idea to P2V Exchange 2003 on Hyper-V ?

I am planning to P2V our Exchange 2003 email server.  40 mailboxes.  I have read the Microsoft articles that say Exchange 2003 can be virtualized on Microsoft Virtual Server 2005 and later.  But does "and later" include Hyper-V on Server 2008 R2?  

Just looking for a "yeah, that's fine go ahead"  or "OMG, do not do that".

I P2V'd our Exchange 2003 server to vSphere 4.1 about 18 months ago and everything was fine. I done it cold, as @hanccocka suggests above, but this was to make sure that we had a good cold migration of the server with absolutely no activity on it.

Once it was converted, the virtual server was powered up and continued as it was.
