How do I limit a user's ability to access another user's mailbox in Exchange 2003

I am not well versed in Exchange, so forgive me in advance if I use the wrong terminology.

I need to limit the ability of a support staff to view a colleague's email, but still allow that support staff to access my colleague's calendar and contacts?  We are currently set up so that all users have access to all other users' inbox and calendars.

Not sure where to begin....
