As you say you are using IMAP, and Zimbra most likely also supports IMAP, you could also use a direct imap-to-imap transfer of the server's data. Check <a href="http://ks.lamiral.info/imapsync/" rel="ugc">imapsync</a> for more details ... that way, you could also move multiple users' mailboxes from one server to another, preserving stuff like whether the mail had already been read, etc ...
