Restore Exchange 2003 from NTBackup

I've had a nightmare with restoring from backups.  I had to install SBS 2003 and manually recreate AD.  That is done.  Exchange is installed and working.  I just realized that the old org name is different than what the Exchange org name is now.  Can I still restore to the recovery storage group and manually copy mailboxes over and re attach them to users?

An Exchange mailbox database is not tied to the server or storage group in which it was created. It can be transferred to any Exchange server that shares the same organization and administrative group names and is of the same major version and service pack revision or is of a higher version that is compatible with the original server.

I'm using SBS 2003, can I Go to Control Panel>Add/Remove Programs.  Highlight Small Business Server 2003, click change, and do a repair install of Exchange and change the org name?
You will have to remove Exchange completey and then install it with a new org name which is your previous org name
Where is the org name and administrative group name in the registry?
It can be seen through adsiedit.msc, however I would not recomend changing it but you may find tools on the internet to change the org name and AG name so dont do it manually, these tools I believe are not supported in production environments
I have used this when I use to work for Microsoft but as I know it is not supported in Production environments
Legacydn.exe is a graphical interface tool that you can use to change the Exchange organization name or the administrative group name and to resolve MSExchangeIS 1088 events that may be logged in the Event Viewer Application log in a lab environment.
Ok, the restore was successful, but now I get an error when mounting the recovered store.  It says "The store could not be mounted because the active directory information was not replicated yet" I have ran policytest.exe and it does find SeSecurityPriviledge.  Where do I go from here?
After all of the Domain Controllers display the "Right found: SeSecurityPrivilege" message, you may have to stop and start the Microsoft Exchange Information Store service before the databases can be mounted.
