What is the best source for self learning MCITP: Enterprise Administrator on Windows Server 2008?
That depends a lot on how you learn... Personally I used a combination of CBT Nuggets, the Microsoft Official study guides and a lot of hands on experience...
In addition to the reading material I'd highly recommend a test lab. It doesn't have to be expensive but a TechNet plus subscription will give you access to all the software you need (if you can't get it through work for example). You can use various virtulization technologies that are free to setup labs.
I like transcenders for exam prep but there are other good companies that have test guides that are can also help. Just google/bing around for those.

CBT nuggets is good, but not good enough due to no hands on lab.
Microsoft Official study guides never explain too well especially the PowerPoint presentation, and the Microsoft Hyper-V Server 2008 R2 are bad comparing to VMWARE. The Microsoft ready (VHD) is too boring and it requires only Microsoft Hyper-V to practice on it.
I bought VMWARE workstation 8 it is the best software I ever seen. now what i want is to practice on VMWARE, but I need a materials which will guide me how to practice, any suggestions?
