That depends a lot on how you learn...  Personally I used a combination of CBT Nuggets, the Microsoft Official study guides and a lot of hands on experience...

In addition to the reading material I'd highly recommend a test lab.  It doesn't have to be expensive but a TechNet plus subscription will give you access to all the software you need (if you can't get it through work for example).  You can use various virtulization technologies that are free to setup labs.  

I like transcenders for exam prep but there are other good companies that have test guides that are can also help.  Just google/bing around for those.

I would suggest to buy MCITP 5-in-1 study system. This has complete coverage of all objectives of five MCITP windows server 2008 Enterprise Administrator exams. Ideal as both a study tool and an on-the-job reference.
This includes hundreds of practice questions and in-depth explanations. Also you will get a CD for practice exams.

CBT nuggets is good, but not good enough due to no hands on lab.

Microsoft Official study guides never explain too well especially the PowerPoint presentation, and the  Microsoft Hyper-V Server 2008 R2 are bad comparing to VMWARE. The Microsoft ready (VHD) is too boring and it requires only Microsoft Hyper-V to practice on it.

I bought  VMWARE workstation 8 it is the best software I ever seen. now what i want is to practice on VMWARE, but I need a materials which will guide me how to practice, any suggestions?

I would recommend TestOut. Quite good but not cheap :/ If you can talk with your employer and convience to buy it for you, it would be good.

And of course you can also read Microsoft books. You can try with 30-day trial version of Safari where you can find all of its books

and after trial period, fees are not so huge, so you can buy an access
