Upgrading from Small Business Server 2003 to 2011 or 2008.

I have a client that needs a new server, their Dell PWR Edge 800 is on it's way out.  SBS 2003 right now.

So:  I am replacing the server hardware.

They want to stick to the SBS platform, they have 15 users, hosting their email on that server and using share point.

SBS 2008 or 2011?  

How can I transfer all their information over from the 2003 to the new server?  Recommendations on how I would?

SBS 2011. There is nothing that 2008 does better so there is no reason to intentionally invest in older tech.

As far as moving data, MS has a migration guide, linked to below. There are also 3rd party guides and kits, such as my favorite, SBSMigration.com. Philip Elder's blog and demazters guide round out potential options.
