How to create calendar in MS Project

I know where to go to "create new calendar"  but why won't it let me change
the hours ?   I've tried adding the 2nd row and entering the hours I want, but
it keeps reverting back to a 1 hour block....... what am I missing?     I want to create
a calendar for day shift (6a-6p)  and one for night shift (6p-6a).      My "tools - options -
calendar"  is set to 24 hours per day, 168 hours per week, etc.

SRMoxy--OOOPS.  I now see your Tag says MS Project 2007.  The first reference above should be most pertinent.
