In a Google Docs spreadsheet is there a way to use external fonts, for instance the Ubuntu font?  The font list seems very limited.

No, the fonts provided are the fonts to select.
You may, however, download the file to another program and change the fonts.

I agree with DoDahD.

Google Docs Spreadsheets is set how it is set.
There is no way to change the fonts.

The best way would be to put the Google Docs Spreadsheet on your computer and open it with OpenOffice / Microsoft Office Excel or another spreadsheet capable application.

When you have changed the font using another application and upload AND convert it into a Google Docs spreadsheet the font will change to one of the Google Doc standard fonts. (just tested this).
If you upload it and keep it as the original type, so if you do not convert it, it will only allow displaying it on Google Docs. You can however download it onto any other computer/mobile unit to change it and upload it again.

The solution is that there was no solution . . . fonts selections in Google Docs are limited only to those on the menu provided.
