How to delete completely the contacts and notes from iPhone 2

We are about replace our iPhone 2 for an iPhone 4.  We will be giving the iPhone 2 to a family member but prior that we want to delete all the Contacts and Notes, but keep all the apps & games

What the best way of doing this?

With the iPhone plugged in to your computer and iTunes up, select the Info tab up top the iTunes window. Once the Info window opens, simply uncheck the sync boxes for each feature. A prompt will come up to confirm that you wish to delete all of, say, contacts. Yes. Done.

1 - do a factory restore on it, this will delete EVERYTHING

2 - once that completes, you will SYNC it again BUT you will tell the iphone to ONLY sync apps/games

In itunes, you will see under the sync settings that you can turn off the syncing capabilty for contacts and notes (essentially, you will simply leave them UNCHECKED)

Yes of course, forgot to mention the iPhone 2 is jailbroken.  If reset via iTune, it will erase as it is.
