unix 'su' command

I am not very clear about 'su' used in unix. I would like to knoe what they do. how and where, when to use. Any ideas, sample code, resources, links highly appreciated. thanks in advance

The su command, also referred to as super user, substitute user, spoof user, set user or switch user, allows a computer operator to change the current user account associated with the running virtual console.

Become super user (root)
su
Become root user with environment
su -

Become user john
su john
Become user john with john's environment set
su - john
