Prevent Server 2011 from automatically rebooting every morning at 3AM

I can't help noticing that over the past few evenings a few of our SBS2011 boxes have been rebooting after Windows Updates. I'd prefer to disable automatic reboot and do them at a time that suits me (E.g when I can sit in front of them!)

I'm not too worried about client computers, so a group policy just for the server could be overkill.. but what's the best course of action?
