Server 2008 GPO Redirect User's Profiles permissions issue

Most of our users logon to a terminal server to work. I recently setup a group policy to with Folder Redirection to redirect each user's Desktop and Documents Folders to our file server. The problem is that as an Administrator, I can not see what is in these folders, which I need to be able to do.

I read a few articles about unchecking the "Grant the user exclusive rights" - which does allow me to see the contents of each profile...however it also allows every user to look in other users folder, which is not desired.

How can I setup the Folder Redirection Group Policy to only allow the user, and a domain administrator, access to the redirected folder?
