My company currently is using Exchange 2007 on it's own physical machine.  We have roughly 65-75 users connecting to it.

The network is in pretty rough shape and I have been planning a migration.  Since I don't have any physical servers free, I wanted to virtualize Exchange 2010 in a VM running all the roles.

We don't have a SAN, and so it would realize on local DAS storage.  I'm wondering if this will work?  There would be 1 or 2 addition servers on the box.  If I allocate it similar hardware as the physical machine do you think I'd be alright?  Give it a dedicated NIC.  Our users aren't super heavy users either.
