Migrating from Exchange 2007 to Exchange 2010

I am planning to migrate to Exchange 2010 from our existing Exchange 2007, and I am stuck on the two servers co-exisiting on the same network issue. How can I load exchange 2010 on a new server with the same name of our existing exchange server? You can't change the name of a server once you load exchange. In all the different Microsoft "how to's" and other posts on-line, I can't seem to find instructions on how to deal with this other than possibly using recovery command lines, which seems risky. I would think there would be an accepted method available and that most people would not want to change the name of their server, and deal with certificate issues etc. Is it something simple I am missing? Thanks in advance!
