Losing Static IP addesses on Servers

Recently, when I rebooted a VM server and tried to connect to the server using RDC by IP address, it couldn't connect.  This server has a DHCP Reservation and the NIC is set to a Static IP address that hasn't changed in many years.  

When I looked at the server in the VM Console, the NIC showed limited connectivity.  So I looked at the properties and they were set to DHCP instead of the normal static IP address.  

I changed the NIC Properties from DHCP back to the static IP address and everything worked fine.

This has happen about 4 or 5 times on different server over the last month and I think always after a reboot.  Generally speaking, I am the only one touching these servers and unless I have developed multiple personalities, I am not making these changes.

In doing some research, I see a lot of articles about this happening, but no resolutions.

So my question is how is this happening and what can I do to stop it?
