Can't uninstall Exchange 2003

I tranistioned from 2003 to Exchange 2010 on new hardware about 3-4 weeks ago.  Moved all mailboxes, public folders, etc...Then dismounted the stores and turned the old 2003 server off for the past couple weeks.  No issues whatsoever with the new server running as it should.  I turned the old server back on just now to remove Exchange 2003 via the Control Panel, and it got most of the way through before it errored out with an error saying something about a basic problem with "messaging collaboration component".  Rebooted and now the oprion to "Remove" or "Uninstall" isn't even next to "Microsoft Exchange" in the Control Panel Add/Remove programs.  What to do??

If all else fails, you can manually remove Exchange by following this MS guide:

Do I even need to worry about uninstalling Exchange from the old server if it's going to be decomissioned and the hard drives wiped anyways?  Can't I just shut it down and then use ADSIEdit to remove it from Active Directory?
