URGENT: Questions about Removing Windows 2000 Mixed Mode

Okay, I know we are way behind the times but we are still running our AD in mixed mode, with 1 remaining Windows 2K Server.  We had planned to remove it this evening, but we find that we have a couple of issues that I really need answered as soon as possible.  Our old pre-Win2K Domain name is DOMAIN_NAME, but the new AD name is domain.org.  Will we have to remove/re-add PC's or Servers to the domain?  And what impact will it have on our end-user when they log-in with, we have a mixed PC environment, Windows 7 and XP machines running Novell Clients.  Also, the AD servers also run DNS.   I've attached a of screen shot from our AD 2k3 server.

So you have two different domains?   You will need to migrate objects to the new domain if I'm reading your setup correctly.

No, it's a single domain that still has it's old pre-Win2k name.

I'm not looking to rename the Domain, that's just what it's pre-Win2k name is.  We can log-in using the both the DOMAIN_NAME and the domain.org, it's like it has a dual personality!  I'm just trying to figure out if we remove the Win2k server and raise the functional level, how it impacts the existing objects in the AD because there will no longer be a pre-Win2k name.  I also think that there may be an issue because there is an underscore in the original Domain name.

Maybe I should clarify.  We have 3 servers acting as DC's, 2 are Windows 2003, and 1 is 2000, the AD is in Windows 2000 Native mode, and the Operations Master is the Windows 2000 server. We want to remove the 2000 server altogether, and promote the AD to 2003, and then eventually 2008...
That you can do, add the new server and promote.

Everything seems to be fine, with one exception, the Domain Functional Level is at Windows 2003, but the Forest Level is still at Windows 2000?!   The procedures I followed were:  Confirmed that the GC was on the main Win2k3 server, then removed it from the Win2K.  Next, I changed the FSMO from the Win2k to the Win2k3.  I then ran dcpromo on the Win2k, removed the DC functionality from it, then removed it from the domain and shut it down, Lastly, I raised the Domain Functional Level to Windows 2003 on the remaining Win2k3 server.  Is there a step I missed?
