How can a set a column to show on all List by default? I want to add a metadata column to all future list created by users.

Hi!
You can't add column to all list templates or content types across the web, you add fields only to your own templates and content types (not system ones). So you can create your own list template and then users will use your template to create lists.
The other way is to create ListAdded event receiver (http://msdn.microsoft.com/en-us/library/microsoft.sharepoint.splisteventreceiver.listadded.aspx) and then you can write code that will add you field to the list.
