Running on Windows Server 2003 R2 - We have a legacy MAPI mail service which emails PDF reports outbound as attachments. The emails are being bounced back from a external reciepient because of two attachments winmail.dat and winpart.dat. I understand the message is being sent in rich text format and this is the underlying cause. Is there anyway I can change this mail to plain text?

I've found this
#define MAPI_SEND_NO_RICH_INFO          ((ULONG) 0x00010000)
but not sure where or how to edit the mail formats.

Any help appreciated.

It would have to depend on the app and how it is sending.

If it's VBA code then given the code we can do it whereas if it's embedded in an application then your best chance is an option in the application.  Either way without more info it'll be hard to proceed.

Apparently the mail profile setup using outlook on the same server sends the email as RTF - i changed the profile but no change.

Still under investigation, I shall report the answer when known.

Was as you thought... embedded in the program.
