Hi,

How do I migrate from a hosted exchange server to Microsoft's hosted exchange platform?

I don't want to export as a PST. Is there a way to do server to server?

is this dedicated exchange hosting? if so, you should be able to use the AD connector and use the Office 365 tool to migrate the mailboxes.

Are you able to access it from AD? if not, i'm afraid there is no other way.
