Multiple users edit one Document

Is there a way to have multiple users in the same document and everyone’s changes will be saved and others can see what is changing in real time?

This is mostly for Excel Spreadsheets.

Google Docs works with Spreadsheets, Word Documents, and Power Point presentations.  You might also look into the Microsoft Office Web Apps.
