I would like to be able to search all the contents of my SBS2011, including Sharepoint Foudnation 2010 and Exchange. Is there a product or technology that can provide a single interface for entering search paramters (keywords, tags, date, file type, etc), that will search all of these data repositories?

You should be able to do it with Search Server 2010 Express:
http://www.microsoft.com/download/en/details.aspx?displaylang=en&id=18914

You might need to update Sharepoint Foundation:
http://www.microsoft.com/download/en/details.aspx?id=5970
