PPTP VPN on SBS 2011 is slow and does not provide Default Gateway

Running RRAS on SBS 2011. It works, but has issues. First - does not provide a Default Gateway after connecting, and was puting the DNS servers in the wrong order. I removed, and re-installes RRAS Role, and im still not getting a Default gateway, the DNS1 server is correct, but now clients aren not getting DNS2 IP. (Using Windows VPN)
I have verified the settings on the Server's NIC are correct (GW, DNS1, DNS2), verified DHCP scope options are correct: both DNS servers are listed, and in the correct order, Gateway is correct, etc.
Also, the VPN speed is totally erratic. There is a dedicated 50/5 Mb pipe at the server, and client location (ping and speed tests remain the same at both locations while VPN has issues). See ping results below:

>>"I have verified the settings on the Server's NIC are correct (GW, DNS1, DNS2), "
I assume you have a second domain controller?
The SBS NIC must point ONLY to your internal Domain Controllers, if a router or ISP is added even as an alternate to the SBS or any clients you will have issues.
You should run the "Fix my network" wizard to verify all is correct.

The VPN will not have a default gateway.  It will be blank or 0.0.0.0 depending on whether "use remote default gateway" is enabled or disabled.

It sounds as if you created the VPN using the RRAS wizard.  If so you should remove it and create it with the "Configure VPN access" wizard under SBS console | network | Connectivity

The client will not be assigned the correct DNS.  You usually have do so manually as per:
http://blog.lan-tech.ca/2011/05/14/vpn-client-name-resolution-2/
Or create a deployable client as existed with SBS 2003
