YSlow Says:
There are 8 plain text components that should be sent compressed

However, I am not sure how to go about GZipping theses 8 text files in the header.

Can someone explain?

If they are static, you may simply configure your webserver to compress static files of this type. Or you may be able to store once and for all a maximally gzipped alternative version of the files.
The details may depend on the webserver you use.
If the text components are not static, details may depend on your server sider scripting software used to produce the text components.
