As title mentions: lost XenApp Datastore, no backup whatsoever, howto continue?

Your only option is to rebuild the farm from scratch.  What you can do to somewhat simplify the process is on each server run chfarm and connect to a local Access data store.  If you have servers, that would make 10 access data stores or 10 farms.  Then create you a new SQL database to be your new farm data store and run chfarm on each server (one at a time) and connect to the new database.  All your applications will still be there on each server so you will just need to republish them.    If you had any customer load evaluators, those will need to be recreated.  If you had any Citrix policies, those will need to be recreated.

You didn't state what version of XenApp you were running.  If you are running XenApp 6.x, you will need to recreate any worker groups.

On my site, carlwebster.com, I have scripts you can run that will thoroughly document your farm.  Run that after you get everything back and working.

This time, make sure you include your data store in your backup procedures.
