NAT vs. Port Forwarding.  What's the best way to set up a LAN between my Linux and Windows server?

We have OpenVPN installed on a Ubuntu Linux server.  The Linux server uses our public IP address.  Inside our LAN is a Windows 2008 RT server.  Any ideas how we can route traffic through the Linux server to the Windows server?

Subject to whatever Linux settings are needed you could:
1) install a 2nd NIC on the Linux machine to support a separate LAN subnet.
2) set it up for NAT / internet connection sharing
3) plug everything else into the LAN side - probably using a switch to get more ports when needed.
