We are using Windows 2008 SBS and have folder redirection enabled.  I wish to disable offline files on all our servers so the user profiles don't grow.  Whats the best way to acheive this?

on the sbs open the domain policy and navigate to :

User Configuration > Admin Templates > Network > Offline Files > "Do not automatically make redirected folders available offline" = Enabled.

Can you see this causing any issues?  Is offline files used for anything else other than redirected folders?
Off line files and redirected folders are two different things.  Off line files enables the user to disconnect from the network and still have access to his files.  Redirected folders simply changes the location of the default "save to" folder from the local pc to the SBS.

IMO, redirected folders is mandatory.  If a PC fails the user will lose all of his data and no backup will (normally) be available.  If you have instituted another backup system, such as WSSE for the stations, then it might be resonable to not use redirected folders.

Off line files, otoh,, are completely optional.

Regarding redirected folders... you can limit the type of files the users can save to the SBS with FSRM - File Service Resource Manager.  This would keep users from filling the server with personal pictures and videos and so on.

What, exactly, is the reason for "not wanting user profiles to grow"?  They are going to grow if the uses create files and folders... and if the space on the server is the issue, have you used the wizards to move the user data to the non system partitions?

On the desktops I've got no issues with off lines files growing on our desktops.  We have a few administrators log onto the servers and want to reduce the amount of data thats stored on the servers.  I cant see any need for my docs, pictures, videos ect to be stored on servers.

Thanks
You will see a need for users documents to be stored on the server when one of those hard drives fails, unless you are taking other steps.

But you can stop redirected folders in the SBS Console, as directed above.
