Simple way is to have a script which user double click will prompt user to close outlook and will start copying data to the shared drive.
you can put this on a schedule task so that pst file get's backup every week or biweekly as per the requirement.
As Anuroopsundd said, it's important to make sure Outlook is closed when you copy the .pst file to the backup location.
Best way I know of is to use the MS pst backup on a schedule.
