This would depend a lot on how else you're using it... but what I would recommend first and foremost is to monitor the event logs....  
You also need to keep an eye on disk space...

Dick space is something that needs to be monitored but inevitably the C Drive will fill this blog has some links that will help recover come of that space. Mainly LOG files and WSUS. 

The WSUS will need to be monitored to approve updates that you want to install in your server(s) and workstations.  

I would go in to the SBS Console and click on Reports and setup some reports that can help you monitor many things.

Also you will want to monitor your backups. Are you using Windows Backup built into SBS?
