VMWARE set up for a domain

I know vmware can be an extension of a network, but can it be its own network with its own domain controller and servers w/o a real network.

you can set up a virtual switch in vmware that is not physically connected to the network.

Yep; you can set up an isolated network in the ntwk config area (Configuration -> Networking). You just add another vSwitch, VM Network port, etc. and do NOT assign any phys (host) NICs to the vSwitch.
