Restoring Exchange Mailbox 2007 to alternative server

I am trying to restore 2 mailboxes from tape to exchange 2007. Our Symantec backup exec doesn't use GR method.

I found a bunch of articles online & that walk you through it my concern is that you restore to the live exchange environment.. To be safe i am considering setting up a virtual Exchange 2007 to do a restore so it doesn't accidentally interfere with the production database. I haven't found any articles how to do that. With an additional exchange 2007 added to the AD environment will this complicate things.

If we still decide to restore to an alternative exchange server is that something that is not recommended?
You can create a Recovery Storage group and restore database to it .
Once database is restored check the  state of datbase using Eseutil /mh "Path of database"
If its clean shutdown state then can mount the database and using Exchange management console can merge to production datatabase
