Hello:
When one works for a large company that implements Changes and pushes on weekly basis,
what is the usual process of change control, which IT sub-groups are involved, how is it being tested to make sure it will work well on production, etc.

It depends on the process being changed. For example, when a GPO is changed in our environment:

1. It is backed up
2. It is edited
3. Tested in an OU
4. Linked to correct OU
