can i install windows server 2008 R2 on a 32bit machine?
I also want to run HyperV on it in a lab environment.

Actually no you can't. 32bit support was removed from server 2008 R2.

that's what I thought, but here is an excerpt from the Microsoft website.  See how it says: (x86 processor)

Component Requirement
Processor • Minimum: 1 GHz (x86 processor) or 1.4 GHz (x64 processor)
• Recommended: 2 GHz or faster

Minimum System Requirement is a 1.4GHz 64-Bit CPU:

Thus the answer is No (as confirmed above).
They might have left that on their website because that was the minimum requirements for server 2008. When 2008 R2 was released they removed 32bit processors as a minimum and only have support for 64bit.
