I’m inheriting an Exchange 2007 environment and soon will be receiving a 2010 environment.
Is there a detailed list (and walk through) of management process I should perform to keep these environments running clean and quick?

I'm looking for suggestions on how to manage 2007 & 2010 on a daily & monthly basis with 20 to 60 users and a small budget.
DB defrags, check on user storeage, run a powershell script to automate reporting...

Perform the server configuration things via the version specific management consoles. Some cmdlet's are changed in 2010 so not all functions may work correctly when trying to change things on the Exchange 2007 server.
Are you looking for specific management things such as creating users?
