I've never used a projector before

If I hire a media room in an average hotel, what's the most common type of connection used for connecting my laptop to the projector? .... is it VGA or S-Video

My laptop only has a VGA output ... now limiting is that ?

Not limiting, all projectors have VGA, its def the most common port
Higher end ones will have multiple types - S-Video/HDMI/Component etc...but I've never come across one that doesn't have VGA as standard...

I've rarely found projectors with s-video, it's rarely seen on laptops either and as that's their market-place would be astounded if VGA isn't supported. Any hotel worth hiring will be able to confirm in advance anyway.

Most hotels will spend the money to keep their equipment in useful condition, and VGA is the most common video connector you will find.  S-video is fairly old and predates digital video, not to mention the picture quality would be limited to 400 lines, much less than HDTVs.
