Exchange 2010 SP2.
We have applications that are using Exchange 2010 as a smart host to transport  SMTP traffic. What is the best way to see it this traffic is getting to the Exchagne server and being sent?  Will this show in the message tracking logs. The messages are not being generated by Outlook but some other IIS server that points to the Exchange server to route its email.

Should show up in the tracking log explorer.  I had to hunt down an issue with my sharepoint server's anonymous relay yesterday and i just filtered based on the sender address to catch any email coming in (or not) from my sharepoint server.  I imagine this wouldn't be any different over a smart host.

You can use Get-MessageTrackingLog and filter it by your remote IIS server IP address and check EventId field result

From http://technet.microsoft.com/en-us/library/aa997573.aspx
The EventId parameter specifies the event categories to return message tracking log entries with. The following are possible event categories: BadMail, Defer Deliver, DSN, Expand, Fail, PoisonMessage, Receive, Redirect, Resolve, Send, Submit, and Transfer.

Get-MessageTrackingLog | where {$_.ClientIP -like '*IIS_Server_IP*'}
