Can I upgrade OSX 10.5.6 server to 10.6 non-server, then to 10.7 server?

We have a need to update our 10.5.6 OSX Server box (quad core xeon) to 10.7.x lion server edition.

From what I can tell, there should be no reason we can't install snow leopard (10.6) desktop edition, then upgrade to 10.7 desktop, and then to 10.7 server edition.

Is that possible/practical? Since 10.6 server edition is $499, it's not cost effective for us to update.

Is there a way to backup 10.5 and restore the settings in 10.7? Thus I would be able to reformat in 10.6 desktop and then upgrade to 10.7 server, and then restore.

It's a mini so I could only mount an external drive.

I guess ebay prices ~$299 are a little better but I'd like to see about a cheaper option as well.

While an expensive solution, it seems like apple sticks it to you when upgrading to server 10.6. We ended up buying the 10.6 server software off of ebay for around $250, and was able to get everything worked out.
