Change the email header in the exchange server 2010

When I setup our new sbs2011 with exchange server 2010,  I tested our email through our ISP.  They said our email header was showing the server name and local domain and asked me to change it to what is in the MX record.  Where do I go to change the header in the exchange server?

Thank you Rob for the information.  I checked those locations and they are set properly.  I'm not sure where to look from here.  When looking at the header; after the Return-path: <my email address>
Received: from <server IP> helo=<the correct MX record DNS>
Received: from <server.domain.local>...with mapi id

I don't know that you can edit how the internal FQDN displays, but it seems you can hide it.  The following article indicates how to do so.  They are using  .pri internally rather than .local but the same applies:
