Need to setup Disk Writing monitoring on windows 2003 R2

Good Day Experts,

I'd like to setup my Windows 2003 R2 server to log how much data has been written to its drive from network users.  If this can be logged by the second that would be great but all i really need is in hour increments.  I have performance monitor open but it doesn't save the counter for physicalDisk and Avg. Disk Byes/Write.  Is there another method or utility that will allow this in a graph format?

If so how do i do this?

You don't do this.   You can log how much data has been written, but no way can you determine the source.

Logging the amount of data written per hour would work great.  How do i do this?

if i setup perfmon to log the amount of data written will it slow down the server?
