Some simple questions:

Can someone PLEASE give me a STEP by STEP guide to both CREATING and INSTALLING a SELF CERTIFIED CERTIFICATE for EXCHANGE 2007 running on a Windows Server 2008 platform (64 bit)
All the ones I have found so far are just too confusing

The reason I need this is that all my outlook clients are asking for a certificate when opening because the existing one has a different name from the server name (local)

I will not recommend you to use Self Signed certificate to configure WEB Services, I highly recommend using a public CA (like godaddy/verisign) which will not only resolve the certificate prompt issue for you but it will also allow you to have a secure communication to your exchange from outside world. You will be able to use  features like Outlook Anywhere which allows client to connect to exchange on HTTPS without the need of VPN.

If you still want to use SELF SIGNed certificate then please read the below article first and we can assist you in get a new Self Signed certificate which has the correct common name and will be then accepted by the internal outlook clients.
