Your fax provider assigns you a the phone / fax line. It is not a setting on a fax machine.

Call your service provider and have them change your number if you need a new number.

Some fax machines have the feature to turn off "caller ID" printed at the top of the fax, but not to change it without changing the number that the fax machine is faxing across.

Correct, most will also let you disable the confirmation / cover letters.

You want to reset the station ID.  This is done during initial setup, which you can get to through the menu.  To do so, do the following:

Press the Menu key.
Press the Up or Down Arrow key to select Initial Setup and press OK.
Press the Up or Down Arrow key to select Station ID and press OK.
Enter your fax number (up to 20 digits) on the dial pad, and then press OK.
Enter your name (up to 20 characters) using the dial pad, and then press OK.

Cheers!
