Symantec Endpoint Protection v 11.05

I have a server with a bad hard drive.  I also have a new server.  I installed SEP Manager  11.05 on the new server.  I am now trying to install a new SEP client package on the existing clients.
Do I need to uninstall the exisitng SEP client package?  And if so, how can I do that remotely and do it easily?

Yes you will have to remove the old version.  You might have to script and package that through sccm or similar to do "easily"

If it is fairly new installation then I would recommend you to install the latest version of SEPM which is 12.1 it has many bug fixes and improvements over SEPM 11.X.

You would again need to uninstall the old clients and push the new ones though, but the results would be rewarding.
