Galaxy S - how can shut the phone (so no calls comes in) but still use the the device for the apps?
This is just that at times I don't want the phone to be on, but I still want to use some of the apps.

You would need to root your Galaxy S,  The other option would be to call your carrier and have then turn off your incoming calls for the time being. If you turn flight mode on all of your wireless connections would be blocked which also includes WIFI which in turn then your apps would not work.
