Different IP's for VMware guests?

I'm about to set up a new server that has two NIC's with VMware's ESXi 5 Hypervisor.
I will be looking at setting up two Guests on it with Windows Server 2008 Standard R2.
Our Juniper firewall has two IP pools - one private with DHCP, and the other public without DHCP but using dedicated static IP's.

As far as the guests on the VMware server go, I'd like to setup one of the guests with a static IP on the private side (192.168.1.x) and the other with one of our dedicated IP's (203.x.x.x).

I'm assuming I will need to use both NIC's for this... one connected to the private and one connected to the public (our firewall calls it DMZ).

How do I tell the guests which NIC to use and what will the host be manageable by?

That's what I thought.  Thanks.
The only problem is, on the laptop I'm using at the moment as a testing platform, I'd like to use the WLAN for the 192 side, but the vSphere client shows that the host doesn't see the Intel 4965agn card.

How can I add this adapter to the configuration so I can then test what you posted above?

Agree with Timotist, if you are using the laptop to test ESXI, (first of Kudos for getting it actually installed), but it may not see your network adapters because they are not in the HAL.  If you are real persistant you may be able to find a pcmcia NIC or other addable network adapter with an acceptable chipset.  In my experience, the biggest challenge for testing has been the SATA adapter, but it looks like you got past that hurdle.

Yeah, it's a HP 850 business laptop with a Core2Duo with Virtualization turned on.
The SATA is set to IDE.  The Ethernet is a supported Broadcom NIC and is working fine, but I was just hoping I might be able to force it to use the WLAN card as well so that I can be confident assigning the vSwitches to the guests before I configure the new Acer rackmount.
Can you "inject" drivers into the configuration or something like that?
I've got Linux drivers for the WLAN card but I don't think ESXi is linux based is it?
It is unlikely that ESXi will work with a wireless interface, as it has limited support for network interfaces.

ESXi is not linux based.

Thanks

I guess I'll just dive in with the new server and ask a new question on here if I get stuck.
