They are not normally installed on Switches.  They are installed on Routers, Firewalls and more commonly Servers (Windows and *nix)

Usually  DHCP runs from a server in a DOMAIN based network.  However, some networking hardware appliences, such as your home wireless router, have limited DHCP capability and will work fine for a small, WORKGROUP based network.

dhcp server installed in servers are more configurable (more options) (either Windows server or linux server) than in router or switches.
