Migrate from 2003 SBS to 2008 R2 Standard

Can somebody that's done it provide best practice instructions for performing this type of migration?  SBS 2003 SP2 (not R2) migrating to 2008 Standard R2.  We're hoping to just migrate FSMO roles.  

The Exchange portion is going to move to Office 365.  We will use to migrate their emails to Office 365, so I am comfortable with that portion of the migration.

    A brilliant article written by fellow EE, avoid reading Exchange part of the story - cause' you're thinking on lines to move Exchange to cloud, so this article be of much help wrt Exchange.
