Backing up VMRCplus Virtual Machines

I am running three production servers virutalized using VMRC, this is running on a full installation of Server 2003 R2. I want to back them up manually, is shutting down the virtual machines and manually copying the VHD enough? I don't need to back them up while they are running, they are citrix servers that don't have a lot of changes to the local server. But I do need to back them up from time to time as they are running Server 2000 that I can not upgrade as my ERP system is to old to run on newer servers.

You actually have Virtual Server 2005 where the virtual machines run on, right? VMRC is the management tool for VS 2005.

Yes, taking regular copies of the VHD files of the VMs while they are stopped will be enoght as backup strategy in your case.
