It's as simple as going to central admin and typing the server name of your email provider.... for outgoing email eg alerts and workflow.<br />

If you don't handle email internally than incoming email eg setting up a list to receive emails could be a problem as each list will have a unique address.<br />

When you say not exchange, do you mean a different internal mail system or do you mean a service provided by your ISP?
